Who is The Pakora Explorer?
My parents are originally from Pakistan, but moved our family to the Orkney Islands in 1988 (via London!) to run a small croft. We were one of the first Asian families on the island and everyone knows the best way to make friends & meet your neighbours is through food!
Pakora for us is like serving tea and biscuits, the two always go together. In our home, we always had the ingredients to make fresh Pakora, these golden nuggets of goodness soon became very popular with our friends & neighbours around the island.
Why is our Pakora Different?
Pakora is generally made using a plain batter and growing up in a Pakistani house, we never had haggis or chicken Pakora (my mum wouldn’t let us – “this is not traditional” she would say!).
But growing up in Orkney, I now have a mixture of traditions that I’m proud of and I’ve taken forward into my cooking.
To make the batter for my traditional & vegetarian haggis Pakora, I use my grandmothers garam masala recipe, which is a blend of 8 whole spices that I roast & grind fresh every week, (often with my mum overlooking my shoulder to make sure I’m doing it properly!). For my Chicken Pakora, I took my mum’s ‘quick’ chicken curry masala which is made using a blend of 9 spices.

Just to be clear – our Pakora sauce isn’t pink! We are bringing you the same sauce we have in our family home – but with a twist! You have to try it to realise why it goes so well with Pakora – I’ve not met anyone yet that hasn’t asked for more. Just look at lovely fresh ingredients that goes into make it!

Food was really tasty. Would highly recommend! I love pakoras but isn’t something that i usually opt for, so this really surprised me. My favourite was the chicken parkora, but again the cauliflower amazed me and I couldn’t stop eating them too! Its a must try. Cant wait to try the spice packs!!

Absolutely blown away by the flavours. LOVED that I could eat everything, being gluten free. The chicken, haggis and cauliflower Pakoras were out of this world- most definitely the tastiest I have had. And loved the idea of being able to have a Pakora party, combined with Scottish gins and whisky! Takes dinner parties to a whole new level. And the sauce… I was even dipping langoustines in it. Must try!!
